Food safety is a critical global issue, particularly regarding mycotoxin contamination such as aflatoxins, which are harmful to human health. This study aims to examine the development of biosensor technology for aflatoxin detection and to evaluate its potential application in food safety systems. The method used was a literature review of relevant scientific publications from the past five years. The results of the study indicate that biosensors, particularly those based on electrochemistry and aptamers, offer advantages in sensitivity, selectivity, and detection speed compared with conventional methods. The integration of nanotechnology, such as the use of nanoparticles and carbon-based materials, has proven capable of significantly enhancing biosensor performance. Furthermore, the development of multi-mode biosensors and their integration with digital systems offers opportunities for the development of more efficient and real-time detection systems. However, several challenges remain, such as sensor stability and application to complex samples. Therefore, further research is needed to optimize biosensor performance so that they can be widely applied to support food safety
